This is an entirely uncommon Pinot Blanc, with all of the structure, acidity and nuance that you don’t usually find in the high yielding grape. It shows the winemaker’s Burgundy flags with a flinty, steely reduction that uncoils with hours of air.
The nose is complex: smokey lemon, wild honey, poppy seeds and a bouquet of exotic flowers slowly emerge from the glass. On the palate, no hair out of place. Lemon and river rocks; golden beets, sunflower oil, and golden raisins. Through it all, there is a savory, lean character: it has the fruitiness of a dry Italian olive oil, and the same mouth coating texture.
Winemaking: Pressed as whole clusters and fermented in used barrels of varying size. Aged for one year on the full lees in barrel and another half year in stainless steel on its entire lees.
