This is a special wine, and the funkiest of the lineup, but that term sells it short. Simultaneously rustic and delicate, with bruised apple, salt, gingersnap, flower pollen, gamey earth, and savory herbs. This array of flavors makes for a very complex wine, and a lip-smacking crabapple texture on the finish leads to a whole other direction, ending with cooling pine and eucalyptus. Not only intellectually engaging, it feels healthy, like drinking a switchel or a restorative tonic. Francois Saint-Lo is the leader of a communal collective just a few clicks south of Breze. Started in 2011, he and his friends restored some remarkable ancient cellars dug into porous limestone. His leadership there is marked by his earnest, heartfelt work in the cellar and the vineyards. The "Les Pouches" parcel has 30 year-old vines in the chalky soils that formed a river bed in ages past. A third of the fruit saw two weeks of maceration, the rest was direct-pressed. No sulfur added.
